My favorite breakfast bread turned into donuts that are BAKED, not fried! Banana bread donuts are my new favorite fall treat!

How is it already late August? This summer has flown by and I've already accepted the fact that it's time to start making fall desserts. I'm totally ok with that because fall is my favorite time of the year!

Growing up, we had banana bread almost every morning. Because of that, I'm brought back to my childhood every time I make it or taste it. I decided to turn it into a donut and top it with the most heavenly maple glaze and it was the Best. Decision. Ever.

These donuts are light, tender and taste like FALL!

In my opinion, everyone needs a donut pan in their life. Don't get me wrong, I LOVE a fried donut but baking donuts is so much easier and healthier.

First of all, mix all the dry ingredients together; second, mix together the melted butter and sugar; and third, add the dry ingredients and the eggs and mix to combine. Finally, stir in the mashed bananas, vanilla and milk.

After mixing all the ingredients together, fill a large piping bag or ziplock bag, cut a small corner off and fill the donut pan 3/4's of the way full. When they're done baking, allow them to cool completely before dipping them in the maple glaze.

Maple glaze is so simple to make with just TWO ingredients: confectioners sugar and maple syrup. How easy is that? For the best flavor, I suggest using pure maple syrup.I topped some of the donuts with toasted chopped walnuts and left some plain. Either way, they are just as delicious!

For the Donuts
  • 1 3/4 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup (1 stick) salted butter, melted
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 over-ripe bananas, mashed
  • 2 teaspoons pure vanilla extract
  • 2/3 cup whole milk
For the Glaze
  • 2 cups confectioners sugar
  • 5-8 tablespoons pure maple syrup
  • Toasted and chopped walnuts for topping (optional)

How to cook Baked Banana Bread Donuts with Maple Glaze

For the Donuts
  1. Preheat oven to 350ºF and spray your donut pans with nonstick cooking spray.
  2. In a bowl, combine the flour and baking powder.
  3. In a mixing bowl fitted with a paddle attachment, combine the melted butter and sugar. Add the dry ingredients and eggs and mix together until just combined. Add the mashed bananas, vanilla and milk and stir until smooth, being careful not to overmix.
  4. Fill a large piping bag or ziplock bag with the batter, cut a small tip off the corner and fill until about 3/4 full. Bake donuts for 12-15 minutes or until they are set. Remove from oven, let sit in the pan for 5 minutes and then transfer to a drying rack to cool completely.
For the Glaze
  1. In a bowl, combine the confectioners sugar and maple syrup until smooth. If it’s too thick, add more maple syrup and if it’s too thin, add a little more confectioners sugar.
  2. Dip each donut in the glaze and top with toasted walnuts if desired.

NOTES:

These donuts are best served the day of but can be stored in an airtight container for up to three days.
