I've been working on creating the best healthy banana bread muffins for months and I FINALLY found it! Oat flour makes these muffins soft and tender while coconut sugar and the bananas give them the perfect amount of sweetness. They're packed with protein and leave you feeling great the rest of the day!

What we put into our body is so important and I've been so inspired lately to cut out preservatives from our house. Why do we eat something with 30+ ingredients??

Don't get me wrong, I strongly believe in celebrating every little occasion with cake and cookies but we have to balance that out with healthy choices. I feel so much better when I know exactly what I'm putting in my body.

I'm looking forward to creating lots of new sweet recipes mixed with some healthier ones over the next year!

Growing up, we would eat homemade banana bread almost every morning and the smell of it baking in the oven brings me so much comfort.

Wanting to create a recipe that was clean and healthy and wouldn't leave me feeling yucky the rest of the day, I got busy baking. I made so many batches and brought many muffins to friends, neighbors, bible study girls, and people going through a tough time.

Whenever someone has a new baby, I love bringing them these muffins. Oats are great for breastfeeding mamas and everyone loves banana bread!

You can buy oat flour from most grocery stores or on amazon BUT I always make it myself at home because it's so much easier and less expensive.

Simply grind rolled oatsin a food processor or blender until finely ground like flour and then measure for the recipe. I grind up a big batch and keep it in a large ziplock bag so I can make these muffins whenever!

Oat Flour Banana Bread Muffins (Gluten Free)

ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 3/4 cup of coconut sugar
  • 2 large eggs
  • 1/2 cup milk (any kind but I used almond milk)
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas (about 1 cup)
  • 1 & 3/4 cups oat flour*
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/8 teaspoon salt
  • A big pinch of cinnamon
  • Extra rolled oats for topping

How to cook Oat Flour Banana Bread Muffins (Gluten Free)

  1. Preheat oven to 350 degrees and line a muffin pan with liners.
  2. In a large bowl, combine melted butter and coconut sugar and whisk to combine. Add the eggs, milk and vanilla extract and whisk to combine.
  3. In a small bowl, mash bananas with a fork until smooth and then add to the liquid mixture, whisking to combine.
  4. Add the oat flour, baking soda, baking powder, salt and cinnamon and stir to combine using a rubber spatula.
  5. Using a large ice cream scoop, scoop batter into the prepared muffin pan filling almost all the way to the top and sprinkle extra oats on top if desired. Bake for 14-18 minutes or until a toothpick is inserted and comes out clean. Cool and enjoy!

NOTES:

Making your own oat flour is so easy and much less expensive than buying it at the store! Simply grind old-fashioned or rolled oats in a food processor or blender until finely ground and then measure.
