Funfetti Blondies

Crunchy on the top, gooey in the center, pastel sprinkles and M&M's in every bite-These Spring Funfetti Blondies are the PERFECT Spring dessert!

I took my browned butter blondies and turned them into the most fun dessert that will be the hit of all your Spring/Easter parties.

These blondies are so simple to make and you can add any type of sprinkles or candies that you'd like. I added pastel sprinkles found here, here and here and pastel M&M's from the grocery store.

Simply mix the melted butter with the sugars, add the eggs and vanilla, fold in the dry ingredients and then fold in the sprinkles and M&M's. Spread into a 9x13 baking dish that is lined with parchment paper and bake for 20-25 minutes. The easiest yet most delicious dessert!

DO NOT OVER-BAKE THESE BLONDIES OR THEY WILL BE DRY. No one likes a dry blondie so I suggest taking them out of the oven when they are still a little gooey in the center (mine took about 20 minutes).

Spring Funfetti Blondies

Yield: 12-15 blondies

Ingredients:

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 12 tablespoons salted butter, melted and cooled
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • 1 cup pastel colored M&M’s
  • 1/2 cup pastel sprinkles (anything but nonpareils)

Instructions:

  1. Preheat oven to 350°F and line a 9×13 baking dish with parchment paper, all the way up the sides.
  2. Melt butter and let it come to room temperature.
  3. In a medium sized bowl, combine the flour, baking powder and salt together.
  4. In a mixing bowl fitted with a paddle attachment, combine the melted butter, brown sugar and sugar. Then add the eggs and vanilla. Gently fold in the flour mixture, then fold in the M&M’s and sprinkles.
  5. Spread batter into the lined baking dish and smooth the top (it will be thick). Sprinkle more sprinkles and M&M’s on top. Bake for 20-25 minutes or until lightly golden on top, rotating pan halfway through baking. The middle will still be a little gooey but they will continue to bake even after you take them out of the oven. Do not over-bake or they will be dry! Remove from oven and let cool completely before cutting into squares.
