Paleo Chocolate Chip Blondies

These Paleo Chocolate Chip Blondies are soft, chewy and so delicious! You’d never know they’re gluten-free, dairy-free and refined sugar-free!

Blondies seem to be one of the most popular recipes on my blog because they are always so easy to make. I’ve gotten a lot of requests for more paleo recipes so I decided to create a paleo blondie and I’m SO glad I did.

Paleo Chocolate Chip Blondies

Ingredients:

  • 2 large eggs
  • 3/4 cup coconut sugar
  • 1/2 cup almond butter (any nut butter will work)
  • 1/4 cup coconut oil, melted and cooled
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups fine almond flour
  • 1/2 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped dark chocolate
  • Maldon sea salt for sprinkling

How to cook Paleo Chocolate Chip Blondies

  1. Preheat oven to  350°F and line an 8x8 pan with parchment paper and spray with nonstick baking spray. Set aside.
  2. In a bowl, whisk together the eggs, coconut sugar, almond butter, melted coconut oil, and vanilla extract until smooth and combined.
  3. Add in the almond flour, coconut flour, baking soda and salt and stir with a rubber spatula until combined. Fold in chocolate chips and chunks. It will be thick like cookie dough.
  4. Spread evenly in the pan and bake for 18-20 minutes or until the edges are slightly golden but the middle is still gooey. You want to slightly underbake these! When they're done baking, immediately sprinkle with Maldon salt and let cool in the pan 15 minutes before transferring to a wire rack to cool completely. 
  5. Cut into squares and enjoy!
