It’s almost that time of year where there’s halloween candy galore, so I created a recipe to use up all that goodness. Gooey Halloween Candy Cookie Bars are filled with whatever candy you have on hand-Reese’s, Twix, Snickers, KitKats, Reese’s Pieces, etc…

They’re so easy to make and so delicious that you won’t be able to eat just one!

These Halloween Candy Cookie Bars are so much fun to make and would be a great activity to do with your kids!

The secret to these bars is NOT over-baking them! Brownies and bars will continue to cook even after they’re removed from the oven, so take them out while they’re still soft and gooey in the middle. You don’t want dry bars!

Halloween Candy Cookie Bars

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, softened to room temperature 
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed (light or dark)
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup chopped candy bars (Reese's cups, Reese's Pieces, Twix, Snickers, KitKat, Hershey's, etc.)
  • Candy eyeballs, optional

Instructions:

  1. Preheat oven to 350 degrees F and line a 9x9 baking pan with parchment paper on the bottom and up the sides. 
  2. In a medium-sized bowl, whisk together the flour, salt, baking powder and baking soda. Set aside.
  3. In a stand mixer fitted with a paddle attachment or a hand mixer, beat the butter, sugar and brown sugar together on medium-high speed for 2-3 minutes or until light and fluffy. Add in the egg and vanilla extract and beat to combine.
  4. Turn the mixer to low speed and slowly add in the dry ingredients until just combined, do not overmix. 
  5. Use a rubber spatula to stir in the chopped candy pieces, saving some for the top.
  6. Press the dough into the lined pan and top with extra candy pieces. Bake for 20-25 minutes or until lightly golden brown on the edges and top, but still soft and gooey in the middle. Remove from the oven and let cool completely in the pan. Slice into 16 bars and enjoy!

Notes:

Store bars in an airtight container at room temperature for up to 3 days.
