These Snickerdoodle Blondies are chewy, delicious and taste JUST like a snickerdoodle cookie! They are so simple to make, and I promise you won’t be able to eat just one!

I’ve always loved snickerdoodle cookies, and my mom would make them all the time when we were growing up. They’re nostalgic.

Whenever I need a quick and easy dessert, I make blondies because I always have all the ingredients in my pantry. I decided to put the two delicious desserts together, and it was the perfect combination! I truly couldn’t stop eating them…

How to:

  1. Preheat oven to 350°F and line a 9x9 baking dish with parchment paper on the bottom and up the sides. This makes cleanup SO much easier! If you don’t have parchment paper, you can generously spray non-stick baking spray on the pan.

  2. In a small bowl, whisk together the flour, baking powder and salt.

  3. In another bowl, whisk the melted butter, brown sugar and granulated sugar. Add in the eggs and vanilla extract and whisk to combine.

  4. Add the flour mixture to the butter/sugar mixture and stir with a rubber spatula until smooth. This batter tastes like cookie dough!

  5. In a small bowl, combine the filling and topping mixture (granulated sugar and cinnamon).

  6. Pour half of the batter into the lined or greased pan, smoothing it out with a rubber spatula. Sprinkle almost all of the cinnamon sugar mixture on top, leaving a little more than 1 tablespoon for the topping. Spoon the rest of the batter on top and carefully smooth out. Sprinkle the remaining cinnamon sugar on top.

  7. Bake for 30-35 minutes or until the blondies are golden brown on top, crispy on the edges but still soft in the middle. DO NOT OVER-BAKE THESE BLONDIES OR THEY WILL BE DRY. No one likes a dry blondie!

Ingredients:

For the Blondies
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 12 tablespoons (1 1/2 sticks) unsalted butter, melted and cooled
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
For the Filling and Topping
  • 1/3 cup granulated sugar
  • 2 teaspoons cinnamon

Instructions:

  1. Preheat oven to 350°F and line a 9x9 baking dish with parchment paper on the bottom and up the sides. 
  2. In a small saucepan or in the microwave, melt butter and let it cool slightly.
  3. In a medium-sized bowl, whisk together the flour, baking powder and salt. Set aside.
  4. In another bowl, whisk together the cooled melted butter, brown sugar, and sugar until combined. Add in 2 eggs and vanilla extract and beat to combine. 
  5. Add in the dry ingredients to the wet ingredients and gently fold with a rubber spatula until smooth and combined. 
  6. In a small bowl, combine 1/3 cup sugar and 2 teaspoons of cinnamon for the filling and topping. Set aside. 
  7. Spread half of the batter into the lined dish, then sprinkle most of the cinnamon sugar mixture on top, saving about a tablespoon or so for the topping. Spread remaining batter on top and then sprinkle with the remaining cinnamon sugar. 
  8. Bake for 30-35 minutes or until golden brown on top but still soft in the center. Do not over-bake or the blondies will be dry. Remove from the oven and let them cool completely before slicing. Enjoy!
