Healthy Lactation Cookies

These Healthy Lactation Cookies are the BEST for nursing momma’s and those who just love a healthy cookie (you don’t have to be a nursing mom-Daniel loves them)! They’re so delicious that you’d never know they’re gluten-free, dairy-free and refined sugar-free!

When I first had Robert and started breastfeeding, I had no idea how hard it would be. It’s a full-time job that’s the hardest but most rewarding thing I’ve ever done. I wanted to give up so many times, but I’m so glad I have stuck with it. Not only is it the sweetest bonding time, but I love knowing that Robert is getting all of my antibodies and nutrients to keep him healthy!

If you’re struggling with breastfeeding, there are SO many great resources out there that have been so helpful to me like Kelly Mom and Mom’s Best-For Breastfeeding Facebook group. I also had a WONDERFUL lactation consultant come to my house to help me that first week home, and she was truly a Godsend. I found her through Lactation Network, and insurance completely covered it!

I also had no idea how hungry I would be! I’m hungrier nursing than I was when I was pregnant. I’ve been trying to eat a lot of foods that are both filling and good for milk supply like my healthy baked oatmeal and oat flour banana bread muffins. The main ingredient in both of these recipes is oats which are full of iron and great for milk supply!

I wanted to come up with a lactation cookie that was full of milk-boosting ingredients that would also be delicious for the whole family. These cookies are so good that you won’t be able to eat just one… Daniel and I ate the entire batch in just 2 days!

The little touch of Maldon sea salt on top makes these cookies truly irresistible…

Ingredients to make Healthy Lactation Cookies:

  • Coconut oil

  • Coconut sugar

  • Eggs

  • Vanilla Extract

  • Oat flour (you can buy this or make your own by grinding rolled oats in a blender or food processor-SO easy)

  • Old fashioned rolled oats

  • Baking soda

  • Cinnamon

  • Salt

  • Ground flaxseed (you can buy this or simply grind your own)

  • Dark chocolate chips (I like using Enjoy Life brand)

  • Flaky sea salt

Healthy Lactation Cookies

Ingredients

  • 1/2 cup melted coconut oil, cooled (melt before measuring)
  • 1 cup coconut sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups oat flour (you can buy this or easily make your own)
  • 1 1/2 cups old fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons ground flaxseed
  • 3/4 cup dark chocolate chips 
  • Flaky sea salt for topping (I like using Maldon sea salt flakes)

Instructions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.In a mixing bowl, whisk together the melted coconut oil, coconut sugar, eggs and vanilla until smooth. Add in the oat flour, oats, baking soda, cinnamon , salt and ground flaxseed and stir with a rubber spatula to combine. Fold in chocolate chips.
  2. Using a large ice cream scoop, scoop dough onto the lined baking sheet, placing them 2 inches apart. Bake for 8-10 minutes or until lightly brown on the edges but soft and gooey in the middle.
  3. Remove from the oven and sprinkle with flaky sea salt. After a few minutes, transfer the cookies to a wire rack to cool completely. Enjoy!

Notes:

Store cookies in an airtight container for up to a week or freeze for up to 2 months. You can also freeze the scooped dough balls in a freezer ziplock bag.
